Chickens don’t arrive as a pile of breasts. Every bird has wings, drumsticks, livers, gizzards, feet—and all of them are worth eating.
These come from the same pasture-raised, certified organic, no-corn, no-soy birds as everything else in the Pantry. Some cuts are familiar. Some require a little more ambition. All come in 5 lb boxes.
Wings: Roast them, smoke them, fry them, sauce them. Plenty of skin and plenty of flavor.
Drumsticks: Easy, forgiving, and hard to overcomplicate. Roast, grill, or braise them.
Livers: Rich and quick-cooking. Pan-fry them, make pâté, or use them however your grandmother insists.
Gizzards: Deep chicken flavor with a firm texture. Cook them low and slow until tender.
Feet: Not much of a dinner by themselves. Very good at turning stock into actual stock.
